Our Jams of white cherries and wild sour cherries, are made with natural process, to going along our ancestors’ working phases.
The fruit used comes from our land for the 80% and the remnant from other producers’ lands. Fruit’s variety that we are working is exclusively territorial.
Our farm has chosen to cultivate and transform only specific fruit, which grows on the land jet from more decades. We do not use chemical matters neither on lands nor on plants but, use, like in biologic agriculture natural defences’ system , like: API for pollination, Bird eating parasites ect. ect. Down I am going to describe you the principal working phases. We pick the fruit during the night preventing it by hot summer sun that could waste its proprieties. The day after we wash and put it in a cold store, 4° for six - seven hours. After we boil it a low temperature for two hours about. The fruit must be cleaned, discarding the stems, stones and leafs, then it must again boil until 100°.
We gradually add the sugar checking always and carefully the PH.
It need to reach an ideal density, keeping under control also the product colour, which does not must became dark.
Machinery, through a pneumatic measure, bots the product in to glass jars a temperature of 90°.
We hand sale and wash the jars, twenty-four hours then we label them, the due date is two-three years and this is also the lot to can trace the product
The ingredients on the label are the only used. Our jams contain no colouring, preservatives or chemical matter.
